Lisa Glinska decided to share the recipe for a delicious and appetizing cake. It will perfectly complement your festive table and definitely will not leave anyone indifferent.

Pastry chef Liza Glinska shared the secrets of making an elegant and delicious “Opera” cake on her Instagram page.

In the post, the confectioner says that 10 years ago she graduated from Le Cordon Bleu culinary school in Paris. Since then, her life has been filled with confectionery art.

It was in Paris that I got to know this dessert for the first time! Just imagine: a combination of biscuit cakes based on nut flour, which are soaked in fragrant coffee syrup, the rich taste of chocolate ganache and delicate butter cream!!! Mmm… It's incredibly delicious! – writes Glinska.

Ingredients:

Almond biscuit “Gioconda”:

  • 160 g eggs
  • 100 g of sugar (1 part)
  • 50 g of flour
  • 100 g of almond flour
  • 35 g of “Molokia” butter (fat content 82%)
  • 100 g of protein
  • 50 g of sugar (2 part)

Coffee syrup:

  • 150 ml of water
  • 100 g of sugar
  • 2 g of instant coffee

Chocolate ganache:

  • 80 g of dark chocolate
  • 80 ml of cream (30-35% fat)
  • 15 g of butter Milk” (fat content 82%)

Butter cream:

  • 80 g of sugar
  • 50 ml of water
  • 60 g of egg yolks
  • 130 g of “Molokia” butter (fat content 82%, room temperature)
  • 2 g of instant coffee

Chocolate glaze:

  • 100 ml of cream (30-35% fat)
  • 100 g of dark chocolate
  • 15 g of honey
  • 15 g of “Molokia” butter (82% fat)
  • 20 ml of coffee syrup
