Zucchini is one of the most popular summer vegetables, which is prepared for the winter in various variations. After all, you want to taste it all year round.

Ukrainian chef Olga Ryabenko decided to share an incredibly delicious recipe for the winter.

Today I am sharing with you a very a delicious recipe for fried zucchini, with which you will always have a side dish ready in winter, – writes Ryabenko.

Ingredients:

  • Zucchini – 1.4 kg. (3 large pieces)
  • Garlic – 50 gr.
  • Parsley – 1 bunch
  • Salt – 1.5 tsp
  • Apple cider vinegar – 1 tbsp. l per jar
  • Oleina oil – 60 ml.

Method of preparation:

1. Cut zucchini into circles. Drizzle with aromatic Olein oil with tomatoes, garlic and basil.

2. Fry on both sides until golden. It will be faster to fry in two pans at the same time)

3. Mix chopped parsley and garlic with salt.

4. Put greens with zucchini in layers in jars. In each jar, add 1 tablespoon of vinegar and Olein oil with tomatoes, garlic and basil.

5. Cover with lids and place in a pot covered with a towel.

6. Pour water and sterilize from the moment boiling for 15-20 min.

7. Carefully remove the cans and close tightly. Turn over and cover.

They should stand like this until completely cooled. This portion makes 3 0.5 liter cans.
