Klopotenko told how to prepare mushrooms for the winter

< strong>Ukrainian well-known popularizer of traditional cuisine and chef Evgeny Klopotenko shared with his subscribers the secrets of how to preserve mushrooms throughout the winter. Read on and learn how to freeze and dry mushrooms for the winter!

Note that the season of forest mushrooms lasts quite a bit. Many people do not even have time to taste a dish made from fresh mushrooms. But there is always a way out – go to the market, buy plenty of mushrooms and prepare them for the winter.

How to freeze mushrooms for the winter

When freezing the taste and aroma of mushrooms is preserved as much as possible. If you have large mushrooms (white or Polish, for example), then this is the best way to prepare them:

  1. Sort through the mushrooms, set aside the wilted ones. Throw away the mushrooms with the worms.
  2. Next, wipe the mushrooms with a clean cotton cloth or cheesecloth. If you wash the mushrooms before freezing, they will absorb water and turn into a jelly-like mass after thawing. Moisten the cloth with water, wipe the cap and the leg of the mushroom.
  3. Cut off the lower part of the leg or clean it with a housekeeper.
  4. Cut the mushrooms into large pieces.
  5. Place the mushrooms in a zip-lock plastic bag, removing as much air as possible (do not damage the mushrooms). Place the bag in the freezer in the section with the lowest temperature or use the quick freeze function.

How to dry mushrooms for the winter

If you have a lot of mushrooms, then this method is perfect for you:

  1. Prepare the mushrooms for drying in the same way as for freezing, without using water and washing.
  2. You can dry the mushrooms in the fresh air, strung on a thread.
  3. You can choose a special dryer, where you need to spread the mushrooms in an even layer.
  4. Or choose an oven – dry at a temperature of 60 degrees for 6-8 hours.
  5. After that, the mushrooms can be transferred to paper or cloth bags.
  6. Before using dried mushrooms, they must be washed and steamed in hot water for at least 10 minutes. After that, they can be added to soup, roast or pasta.
