Schnitzel is a thin piece of meat breaded in breadcrumbs and fried until crispy! To make the pulp even juicier and tastier, I decided to add grated mozzarella inside – the result was simply wow!
– noted Yaroslavsky.

For 2 large schnitzels:

  • 2 chicken fillets
  • 100 grams of mozzarella
  • 2 eggs
  • unsalted corn flakes
  • breadcrumbs, turmeric, smoked paprika, a little oregano, you can add dry garlic
  • salt, oil for frying

  1. I flatten the fillet – I cut it in the middle, without cutting to the end – and open it with a “butterfly”. Beat gently, it is best to do it in cling film. You can even beat it with the handle of a large knife. Lubricate the fillet with water – it will be juicier later and will reflect better.
  2. When the flesh is already thin, I salt and rub mozzarella on half of the fillet. With the help of a film, I cover with the second half, beat a little and press everything together. I put it in the refrigerator for 30 minutes so that everything “seizes”.
  3. I add a spoonful of water to the eggs and beat them well with a fork – this way the breading will be thinner.
  4. I mix unsalted flakes with breadcrumbs and spices – smoked paprika, turmeric, you can add a little dry chili, dry oregano, dry garlic or your favorite curry mixture. For breadcrumbs, it is best to take Panko or grate white bread on a grater to get large pieces and dry them.
  5. I first bread the chop in flour and shake off the excess, then dip it in egg (egg). I lift and let the excess drain and immediately roll in breadcrumbs. I add a little more breadcrumbs on top, carefully press it down and put it on a hot pan with oil.
  6. Fry both sides over medium heat for about 2 minutes – it's done!

Garnish: can be served with mashed potatoes or green peas with butter.

Sauce: homemade mayonnaise on one yolk with grain mustard, barbecue sauce and greens. p>

  • yolk
  • 150 grams of oil
  • 25 grams of grain mustard
  • 30 grams of barbecue sauce
  • chopped greens
  • a spoonful of sour cream
  • salt, pepper

Delicious!
