A variety of fish works well with this recipe. I was cooking seabass. But in combination with such a sauce, any will be delicious, – writes the chef.

Ingredients:

  • Seabass (other) – 1 pc;
  • Salt, pepper;
  • Olive oil;
  • Butter – 40 g;
  • Rosemary – 1 sprig;
  • Garlic – 3 cloves;
  • Onion – 2 small pieces;
  • Sweet pepper – 1 piece;
  • Boution (water) – 200 ml;
  • Cream – 3 tbsp;
  • Oregano – 1 tsp;
  • Dried parsley – 1 tsp;
  • Dried tomatoes – 1 tsp;< /li>
  • Cherry tomatoes – 8 pcs or 1 medium tomato;
  • Fresh parsley

Cooking process:

1. Clean the fish and cut it into fillets.

2. Salt, pepper and fry in heated oil, skin side down, pressing for 2 minutes.

3. Add a piece of butter, a sprig of rosemary and turn to the other side. Fry for another 2 minutes, constantly pouring oil. Remove from the pan.

4. Chop the onion, pepper and garlic and fry them in the same pan until the onion is transparent.

5. Add broth or water and cook for 3-5 minutes. Add spices, salt, pepper. At the end, we pour in not cold cream, stirring constantly.

6. Add chopped tomatoes to the sauce. Immediately return the fish to the pan and cook for no more than 1 minute.

7. Pour over the sauce, add fresh parsley and remove from the heat.
