We are cooking duck in beer with apples and potatoes according to Lisa Glinska's recipe

This recipe is perfect for housewives who want to surprise their relatives or guests. After all, it is incredibly tasty, filling and interesting.

Ukrainian chef and pastry chef Liza Glinska decided to share the recipe for duck with apples and potatoes. She posted the cooking details on her YouTube channel.

Ingredients:

  • 1 duck (2-2.5 kg)
  • 1/4 tsp. ground cinnamon
  • 20 ml vegetable oil
  • 1 tsp honey
  • 1/4 tsp. ground black pepper
  • 1 tsp. salt (bitter)
  • 400-500 g of apples (sour varieties)
  • 600-700 g of potatoes

For pickling:

  • 1 liter of light beer
  • 300-500 ml of water
  • 6-8 peas of allspice
  • Preparation method:

    1. Clean the duck, cut off the third phalanges and cut out the fat gland above the hump.

    2. Place the duck in the container and pour beer over it. Add water to cover the duck with brine. Add peppercorns.

    3. Place the load (cover with something on top). Put the duck in the refrigerator for 10-12 hours.

    4. Remove the duck from the brine, pat dry with paper towels, and brush with a mixture of oil, honey, salt, pepper, and cinnamon. Put the carcass in a baking dish.

    5. Fill it with pieces of apples, add salted potatoes.

    6. Bake in an oven heated to 170 °C for 1 hour 30 minutes, covered with foil (bottom and top heating).

    7. Remove the foil, increase the temperature to 185 °C and bake until the duck is golden brown. Convection mode or bottom heating with convection.
