Mushroom caviar is a universal dish. It can be prepared as a snack on toasts and sandwiches, and as a filling for vegetables or homemade pastries. You can also make it as a reserve for the winter.

Tender , aromatic, it is ideal as an appetizer or an addition to the main dishes, – writes Ryabenko.

Ingredients:

  • Champus or forest mushrooms – 1.5 kg;
  • Onion – 500 g;
  • Carrot – 300 g;
  • Oil – 100-200 ml;
  • Garlic – 4 cloves;
  • >

  • Thyme;
  • Salt, pepper – to taste;
  • Nutmeg – 1/2 tsp;

Method of preparation:

1. Wash the mushrooms and cut them into small pieces. If you are going to cook from forest, you need to boil it.

2. Cut the onion and garlic, grate the carrot on a coarse grater. Heat a pan with oil and fry the vegetables until golden.

3. Add mushrooms and thyme. Fry over medium heat until the vegetables are ready.

4. Pass the finished vegetables through a meat grinder or grind them in a blender, add salt, pepper and nutmeg.

5. Place caviar in sterilized jars. This portion makes 4 cans of 350 g each.
