Shrovetide 2024: cooking dumplings with Volodymyr Yaroslavskyi and Taiana

>> p>Masnytsia or kolodiy is a holiday celebrated during the week before Great Lent. Traditionally, dumplings were not made in Ukraine, but pancakes. The most common were dumplings with sour milk cheese.

Ukrainian chef Volodymyr Yaroslavskyi decided to prepare traditional Ukrainian dumplings with apples on the eve of Shrovetide. Together with him, the singer Tayana starred in the video.

Tayana and I prepared dumplings with apples, which her grandmother used to make for her when she was a child, the chef said.

Ingredients:

Crust dough with egg:

  • 400g flour
  • 20g oil
  • 160g boiling water
  • salt, sugar
  • 1 egg

Filling:

  • 5 large apples
  • 3 tbsp. l. sugar
  • cinnamon

Cooking method:

1. It is best to make custard dough: add salt, sugar, oil to the flour, make a well and pour boiling water, mix.

2. After that, add an egg to the still warm dough and mix to a homogeneous consistency. Let stand under the film for half an hour.

3. Prepare the filling: peel the apples, grate them, add sugar and set aside so that the excess moisture evaporates.

4. Next, roll the dough, cut it into small pieces, each piece separately, shape it into a thin circle with your hands, put the filling and seal the edges.

5. Cook in boiling salted water for 4 minutes.
