Ukrainian pastry chef and chef Lisa Glinska decided to make special dumplings this time. She shared the recipe with her followers.

In some regions of Ukraine, the last week before Great Lent was called “Syropust”, in most places the week began with cheese dumplings, which were simmered in the oven with sour cream, pancakes, flatbreads with cheese, cheese cakes were made. Meat dishes were no longer eaten, gradually preparing for fasting, the diet was dominated by dairy products, especially cheese, eggs and butter.

The dishes of this week differed depending on the region. History says that dumplings with cheese were traditional for Right Bank Ukraine. Pancakes were made mainly in Slobozhanshchyna.

To be honest, I just found out that steamed dumplings with cheese are traditionally prepared this week in Ukraine. I am sharing my excellent, incredibly tasty recipe with you. Cook with pleasure and love, gather in a family circle, shape and taste dumplings together, – said Glinska.

Ingredients:

Dough:

  • 250 ml of kefir
  • 5 g of baking soda
  • 20 ml of refined sunflower oil
  • 2 g of salt
  • 10 g of sugar
  • 330 g of flour

Cheese filling:

  • 350 ​​g of cheese 5-9%
  • 50 g of eggs
  • 15 g of sugar
  • 1 g of salt
  • vanilla sugar
