Plum season is not over yet. And you can make very, very tasty pies from them.
Chef Oleksandr Gorodnyk shared the recipe for this delicacy on his Instagram. Keep it for yourself to please yourself and loved ones with pies with plums!
Dough:
- Wheat flour – 500 grams
- Milk – 250 milliliters
- Sugar – 100 grams
- Dry yeast – 7 grams (or 20 grams fresh)
- Butter – 100 grams
- Egg – 1 piece
- Salt – 1/2 teaspoon spoon
Dough preparation:
- Heat the milk a little (it should be warm to 25 degrees, but not hot). Add the yeast, 1 tablespoon of sugar and leave for 10 minutes so that the yeast “comes to life”.
- Sift the flour into a large bowl, add salt and the rest of the sugar. Add the egg, yeast mixture and melted (but not hot) butter to the flour.
- Knead a soft, elastic dough. If it sticks to your hands, you can add a little flour, but do not overdo it – the dough should remain soft.
- Cover the dough with a towel or film and leave it in a warm place for 1 – 1.5 hours to rise twice.
For the plum filling:
- Plums – 600 grams
- Sugar – 100 grams
- Corn or potato starch – 10 grams
- Vanilla – 1/2 stick (if desired, or cinnamon 1 stick )
Preparing the filling:
- Wash the plums, cut them in half and remove the stones.
- Then cut plums into medium pieces.
- Mix the plums with sugar and vanilla (if using) boil for 3 minutes and add the starch diluted in cold water, it will help the filling stay thick during baking and boil for another 2 minutes with the starch.

For streusel (crispy sprinkles):
- Flour – 150 grams
- Sugar – 75 grams
- Cold butter – 75 grams
Mix all the ingredients quickly in a bowl, it should have a consistency similar to sand.

Forming the cakes:
- When the dough rises, divide it into equal parts of 50 grams each.
- Roll each piece into a small circle, if necessary sprinkle the surface with flour.
- In the center of each circle put a spoonful of plum filling 40 grams.
- Close the edges of the dough, well seal so that the filling does not leak out.
- Place the patties seam-side down on a parchment-lined baking sheet.
- Leave the patties for 15-20 minutes to proof.
- Grease them beaten egg for a golden crust and sprinkle with streusel.
- Bake in an oven preheated to 180°C fan mode for 20-25 minutes until the patties are golden.
