How to cook sun-dried tomatoes: a recipe from Olga Ryabenko

This is a real culinary must-have for every housewife. They can be added to salads, pastas, pizzas and various snacks.

Ukrainian chef Olha Ryabenko shared the recipe on her Instagram page.

Sun-dried tomatoes are rich on antioxidants, vitamins A and C and contribute to the normal functioning of the heart.

Ingredients:

  • Tomatoes (cocktail or cream) – 0.5 kg;
  • Garlic – 3-4 cloves;
  • Dried oregano – 2 tsp;
  • Salt – to taste;
  • Oil.

Cooking process:

1. Wash and dry the tomatoes. Cut them in half.

2. Place the tomato halves on a parchment-lined baking sheet, cut side up. Salt and sprinkle with oregano.

3. Place the tray in an oven heated to 90-100°C with the door ajar. Dry the tomatoes for 4-6 hours, checking that they remain flexible and not overdried.

4. Take out the tray with the tomatoes, press them down with a spatula or a glass and put them back in the oven for 2 hours at 140*.

5. Put the finished tomatoes in a sterilized jar, add chopped garlic and oregano, cover with aromatic oil and store in the refrigerator.
