How to cook ratatouille: recipe details from Lisa Glinska

Ratatouille is a traditional dish of provincial French cuisine, a vegetable stew common in the Provence region. It was originally a dish of Provençal peasants, consisting of zucchini, tomatoes, peppers, onions and garlic. Later, eggplants were added to ratatouille.

The season of fresh vegetables is always delicious! I really like to bake them, fry them, make fresh salads, cook vegetable soups. It is always beautiful, tasty and useful, – writes Glinska.

Ingredients:

  • 400 g of zucchini
  • 400 g of eggplant
  • 400 g zucchini
  • 400 g tomatoes
  • 300 g bell pepper

For dressing:< /p>

  • Aroma oil “Oleyna” with herbs basil, oregano, rosemary
  • 500 g tomatoes
  • 300 g bell pepper
  • 100 g onion
  • 200 g carrot
  • Salt
  • Black pepper

Method of preparation:

1. Prepare the sauce. Cut the onion into cubes, rub the carrots, fry in a pan with aromatic oil “Oleyna” with herbs basil, oregano, rosemary.

2. Remove the skin from the tomatoes, cut them into small cubes, add browning, salt and pepper.

3. Simmer for 10 minutes.

4. Bake the pepper in the oven, remove the skin, add it to the frying pan and blend it with a blender.

5. Cut all vegetables into rings 3 mm thick and stack them, alternating zucchini, tomato, eggplant, zucchini. Put the sauce in a mold, stack the vegetables on it in a circle (spiral), sprinkle with aromatic oil and bake in an oven heated to 180 degrees for 40-50 minutes.
