And you know how to cook green adjika – a recipe from Olga Ryabenko

Adjika is an Abkhazian and Georgian spicy aromatic seasoning invented by Jews in the form of a paste-like mass of red pepper, garlic, and herbs. It has been a part of Georgian cuisine since ancient times.

Adjika is usually red in color, but a green seasoning can be made from unripe pepper. Chef Olga Ryabenko explained the details of how to make such adjika.

It is the perfect addition to your table, combining the piquancy of fresh herbs and the freshness of vegetables.

Ingredients:

Makes 2 cans of 370 ml

  • Parsley – a large bunch;
  • Dill – a large bunch;
  • Garlic – 1 head;
  • Hot pepper – 1-2 pieces;
  • Sweet pepper – 4 pieces;
  • Oleina aromatic oil with herbs – 100 ml;
  • Salt – 1 tbsp.
  • Sugar – 5 tbsp.< /li>
  • Apple vinegar – 6 tablespoons;

Method of preparation:

1. Pass greens and vegetables through a meat grinder.

2. Add salt, sugar, oil and vinegar.

3. Mix and put in jars.

4. Store in a refrigerator or cool place.
